Ingredients

  • 1 cup Jif Creamy Peanut Butter or Crunchy for added texture
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips optional, for a peanut butter-chocolate twist
  • 1/2 cup chopped peanuts optional, for extra crunch

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the butter, Jif peanut butter, granulated sugar, and brown sugar with an electric mixer for 2-3 minutes until fluffy.
  • Add the egg and vanilla extract and mix until well incorporated.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. Fold in optional chocolate chips or chopped peanuts if using.
  • Scoop 1 tablespoon of dough and roll into a ball. Place 2 inches apart on the prepared baking sheet.
  • Use a fork to press down each dough ball, creating a crisscross pattern.
  • Bake for 10–12 minutes, until the edges are lightly golden and the centers are slightly soft.
  • Cool the cookies on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. For extra chewiness, add 1 tablespoon of cornstarch to the dry ingredients. Store cookies in an airtight container with a slice of bread to maintain softness.
